Festive Seasonal Greens

The prefect show stopper of a side for your Indian inspired Christmas meal.

Festive Seasonal Greens in a Nigella and Cream Sauce.


40 gm Ghee/unsalted butter

1 heaped tablespoon Nigella seeds

250 gm Sliced leeks

300 gm Shredded cabbage

200 gm Frozen peas

100 gm Cubed red pepper

1 heaped teaspoon sweet smoked paprika

20 gm finely grated ginger

Chilli flakes (optional)


300 ml Single cream

50 ml Hot water


1. Melt the ghee/butter. Add the leeks, nigella seeds, sweet paprika, chilli flakes if

using, and ginger. Cook until tender.

2. Add the cabbage and red pepper along with 50 ml hot water. Put a lid on the

pan and leave until nearly cooked.

3. Add the frozen peas (add a little hot water if necessary). Leave until cooked.

4. Add the cream, season with salt and heat through
